This Dairy Free Rhubarb crumble is a decadent way to start (or end) your day! The rhubarb and our WayFare Sour Cream add a subtle tang to the dish while the crumble topping offers a sweet side. This dish is delicious no matter what time of day!
1 Tbsp ground flaxseed
3 Tbsp water
1½ cups packed brown sugar
½ cup WayFare Salted Whipped Butter, melted
1½ cups WayFare Sour Cream
½ tsp salt
1 Tbsp vanilla extract
1 tsp baking soda
2 cups all purpose unbleached flour
3 cups finely diced rhubarb
¼ cup organic cane sugar
¼ cup WayFare Salted Whipped Butter, melted
¼ cup all purpose unbleached flour
½ cup walnuts, chopped
½ tsp cinnamon
Preheat oven to 350°F. Prepare 9″ x 13″ baking dish.
- Combine topping ingredients and set aside.
- Combine flax seed and water. Mix well and set aside.
- Cream sugar, butter, sour cream, vanilla, salt. Add flax mixture. Mix well. Add soda and flour. Mix well and add rhubarb.
- Pour prepared mixture into the baking dish. Sprinkle topping over the cake. Bake about 45 minutes. Serve as is or with ice cream.
