Rhubarb Crumble

Ingredients

1 Tbsp ground flaxseed
3 Tbsp water
1½ cups packed brown sugar
½ cup Wayfare Salted Whipped Butter, melted
1½ cups Wayfare Sour Cream
½ tsp salt
1 Tbsp vanilla extract
1 tsp baking soda
2 cups all purpose unbleached flour
3 cups finely diced rhubarb
Topping:
¼ cup organic cane sugar
¼ cup Wayfare Salted Whipped Butter, melted
¼ cup all purpose unbleached flour
½ cup walnuts, chopped
½ tsp cinnamon

Method

Combine topping ingredients and set aside.
Combine flax seed and water.
Mix well and set aside.
Cream sugar, butter, sour cream, vanilla, salt. Add flax mixture. Mix well.
Add soda and flour. Mix well and add rhubarb.
Pour prepared mixture into the baking dish.
Sprinkle topping over the cake.
Bake about 45 minutes.
Serve as is or with ice cream.
