This simple and quick stir fry is great for when you’re in a bind for time. It is packed with flavor and nutrition (two of our favorite things!) And of course, it’s dairy free, using our WayFare Salted Whipped Butter and Sour Cream to top it all off. You can use this recipe for burritos, tacos, salads or serve it with rice or noodles. The possibilities are deliciously endless.
1 Tbsp WayFare Salted Whipped Butter
3-4 garlic cloves, finely chopped
1 ½ cups sliced red onion
1 cup sweet red bell pepper, thinly sliced
1 cup yellow bell pepper, thinly sliced
1-2 cups carrot, julienned
1 ½ Tbsp finely chopped ginger or ginger puree
1 can of black beans, drained
1 Tbsp agave nectar
1 tsp salt
2 Tbsp fresh lime juice
1 tsp black sesame seeds
1 tsp white sesame seeds
1-2 scallions, sliced
1/2 cup WayFare Sour Cream
- In a large pan,over medium heat, sauté: butter, garlic, onion, peppers, carrots, and ginger for around 5 minutes.
- Add drained black beans, agave nectar, and salt. Simmer for another 3 minutes.
- Place in a bowl. Garnish with lime juice, sesame seeds, scallions, and WayFare Sour Cream.
