This Black Bean & Corn Casserole is a quick and easy dish that will please everyone. It’s perfect for potlucks or summer gatherings! Topped with our Dairy Free Sour Cream this is a healthy alternative to traditional casseroles.
Black Beans & Rice Mixture:
1-2 Tbsp WayFare Salted Whipped Butter, melted
1-2 shallots, finely chopped (or 1/3 cup chopped red onion)
3 cloves garlic, minced
1/2 tsp chili powder
1/2 tsp cayenne pepper (optional)
4 cups (2 cans) black beans, rinsed, drained
2-3 cups brown rice or quinoa, cooked
1 Tbsp WayFare Salted Whipped Butter, melted
1/4 tsp salt
Corn Vegetable Salad:
2 cans whole kernel corn, drained
1 chopped medium red pepper
1/4 to 1/2 bunch green onions, chopped
1 cup chopped tomato (or cherry tomatoes cut in half)
4 Tbsp fresh lime juice
1 Tbsp olive oil
1/2 tsp salt
1 avocado for topping, at end
1/2 cup WayFare Sour Cream for garnish when serving
- Cook rice or quinoa. Bring water to a boil. Cook covered, slowly steaming. Add butter and salt.
- Prepare black beans. Saute butter, shallots, and garlic. Add seasonings and beans. Mix well and add to rice.
- Prepare Corn Vegetable Salad. Drain corn and place in a bowl. Combine with chopped red pepper, green onions, tomato, lime juice, olive oil, and salt. Mix well.
- In a casserole dish add beans and rice mixture to one side. Add the corn salad to the other half and top with WayFare Sour Cream and avocado.
